May 23, 2013

The best coleslaw recipe I have is easier than you think.  Try it this weekend with my Pork with Ranch BBQ recipe.  Quick to fix with a “ready to prepare” bag of coleslaw mix from the grocer and just a few on hand ingredients makes this a must have for cookouts & family gatherings!

Chicken Pepperoni

If you are a fan of Chicken Parmesan, you will become a HUGE fan of Chicken Pepperoni.  This recipe is in the regular rotation of things I prepare at home on busy nights.  It looks great if you want to serve it as a company’s coming entree. Kids LOVE it and it freezes beautifully if you are making monthly meal plans and want to save prep time on future meals.

Tomato Basil Soup

When it begins to warm up, I am always eager to find a recipe that doesn’t require me to spend too much time in the kitchen.  I am a huge fan of Tomato Basil Soup and always try the offerings at restaurants when I get a chance.  I would put this version up against any I have eaten out at popular eateries and it goes together quickly.

Stewed Okra and Tomatoes

Have you ever had one of those recipes that you can do without looking at the directions?  This is one of my memorized recipes because I make it so often, especially once summer arrives.  Homemade okra and tomatoes is one of my go to comfort food side dishes.  You can make it with canned tomatoes and frozen okra, but if you have the opportunity to use freshly canned tomatoes or fresh okra, you can give it even more home grown flavor. Cooking with Kids

The kitchen can be a fascinating place for children.  If you are not including your children in the kitchen occasionally, you are missing out on a great parent-child activity and they are missing out on learning lifelong skills and good eating habits. Whether you have very young children or preteens, there is something meaningful in getting everyone involved in the family dinner.

Banana Bread

I did it again…I let my bananas start getting too ripe and they were in danger of going out with today’s trash, but then I had a better idea and whipped up this quick banana bread.  It turned out great and my sad bowl of over ripe bananas was saved from the curbside.  This turned out better for them and for my family because it was a great treat~  I know you will enjoy it, too!
